About Us

The Bluebird Bar has been a lifetime in the making. We believe that there’s something magical about a well-run, dimly lit neighborhood bar. We’ve spent all of our adult lives chasing this magic. We are delighted to bring our interpretation of this type of bar & restaurant to West Newton.

If you are the type of person who appreciates a well-made cocktail, staying out late on a school night, and eating delicious food, we’re probably going to become friends.

We pride ourselves on sourcing the finest Spirits & Wines we can find, and then sharing them with our neighbors and friends.

We hope you’ll enjoy the experience of the Bluebird Bar.

Meet the Team

David Sardella / Principal

Like plenty of Bostonians, Dave’s introduction to the hospitality business began by working in various bars and restaurants in and around the greater Boston area. After working in about every role available in the front of the house, Dave seized an opportunity to move into the supply side side of the business, where he spent the next 20+ years Managing the New England region for Maker’s Mark, Sazerac Co, Sidney Frank Importing, and Infinium Spirits, where he kept the city’s finest restaurants flowing with rivers of Whiskey. These were exciting times. Dave was part of the bursting bourbon phenomenon, helping to grow Maker’s Mark into the global powerhouse it is today. Continuing riding the whiskey river, Dave next spent years introducing New England to many life-changing whiskeys from the Buffalo Trace Distillery. If Maker’s Mark set the table for Bourbon drinkers, Buffalo Trace, Blanton’s Eagle Rare, W.L. Weller and Pappy Van Winkle sealed the deal, and solidified the market.

Patrick Sullivan / Principal

After cutting his chops behind the bar at the East Coast Grill & Raw Bar, Patrick went on to open the legendary B-Side Lounge in Cambridge. The B-Side provided a crucial spark in the city’s burgeoning cocktail scene. Fielding a murderer’s row of bartenders, the B-Side went on to expand the cocktail scene both locally and nationally.

While serving as Director or Bar Operations for Legal Sea Foods, Patrick once again found himself with the itch of ownership, and soon was back at the helm of yet another important cocktail bar in Cambridge, co-founding the beloved industry haunt Brick & Mortar, LTD. B&M soon cemented itself in the city’s roster of great bars, serving strong drinks and fun times to a willing audience.

Jordan Runion / Lead Bartender

A North Carolina transplant, Jordan found his way into restaurants in Boston the old fashioned way; as a patron. Young and inexperienced, Jordan started his restaurant journey at the busy and respected Deep Ellum & Lone Star complex in Allston. Opportunity is usually born from hard work, and the busy nature of Deep Ellum provided ample opportunity to grow and learn. In this business, stripes are earned, never given. Here, Jordan worked his way from food-runner, to barback and eventually to bartender. Next, Jordan continued his A-Z training at the venerable Cambridge institution, Green Street Grill. When friend Dave Cagle was opening the Automatic Bar in Kendall Sq, Jordan was hired on to open the bar and serve as its opening Bar Manager. The Automatic soon gained a reputation for quality food and drink in a fun, friendly atmosphere. Opportunities to work for the very best in the field don’t come often, so when Jordan was offered the opportunity to work for Ran Duan at the highly acclaimed Blossom Bar, he jumped at the opportunity. Here Jordan fine-tuned his craft and learned approaches, techniques, and levels of hospitality previously unrevealed.
